Organic mixed greens
2 Organic pears
Organic Goat Cheese
Vegan Margarine/ or butter if your prefer
Orange Vinaigrette Dressing:
4 oranges juiced
1/4 cup olive oil
1/4 cup lemon juice
1/8 cup balsamic vinegar
Salt and pepper to season
In pan sauté sliced pears with vegan margarine, 2 TBSP brown sugar and a dash of nutmeg. Sauté until tender, take off heat and place in a bowl until ready. In same pan, sauté the beets with the juice of 1 orange and 1tsp of garlic salt. When beets are tender set aside. Sauté walnuts in a pan with vegan margarine and 1/4 cup brown sugar. Once walnuts are fully coated take off heat spread on parchment paper and put in freezer for about 10 minutes to cool and harden.
Now is the time put it all together. Lay a bed of mixed greens, beets will go on top of that. Pears next, followed by candied walnuts and a sprinkle of the goat cheese. Drizzle your beautiful orange vinaigrette dressing over the salad and enjoy!
