Fab’s Roasted Harvest Soup

My favorite time of the year is Fall. I love the smell my house takes on when I am cooking my all time favorite recipes. My favorite recipe is my harvest soup. It has become a fall staple for our family and I hope it becomes one for your family as well. This comfort food has many anti-cancer properties and I am excited to share it with you.

Fab’s Roasted Harvest Soup

Ingredients:
8 medium size Carrots peeled
1 Butternut squash peeled and seeded
2 medium size yellow onions
1 can of organic pumpkin puree
3 cloves garlic
1/2 cup unsweetened almond or coconut milk
4 cups vegetable broth
2 Tbs. olive oil
Organic dried cranberries

Seasonings:
2 tsp. sea salt
1 Tbs. cinnamon
1 tsp. cloves
1 Tbs. pumpkin pie seasoning
1 tsp. garlic salt
1 Tbs. nutmeg

1: Toss together the squash, carrots, onion, garlic, olive oil, cinnamon, sea salt, garlic salt, cloves, and almond milk.
2:  Roast in a deep baking pan at 400 degrees F for 60-90 minutes or until the vegetables are fork tender.
3: Remove vegetables and add to a food processor. You may need to do this in two or three batches as you will need to add a little vegetable stock to process well. Puree very well until no lumps are present and the puree is very smooth.
4: Transfer to a saucepan and simmer for 15-20 minutes. Garnish with organic cranberries or caramelized pumpkin seeds.
5: You can also transfer to a crock pot and keep warm until ready to serve.

Carrots- Improves skin and digestion. Reduces incidences of STROKE. Improves LIVER and KIDNEY functions. Is also an ANTI-CANCER food.

Cinnamon- CANCER prevented, Controls blood sugar, fights yeast infections, aids in weight loss, VIRUS fighter, and effective against ARTHRITIS.
