5 Sweet potatoes cut into 1 inch pieces
2- 10oz cans low sodium black beans
1- bag of frozen non-GMO corn
Quinoa, wild rice, or brown rice can be served in the bottom of the bowl
Spices: dry ingredients
2- Tbs curry powder
1- tsp ginger powder
1- tsp paprika
1-tsp garlic salt
1 tsp black pepper
Ingredients for Cilantro cream sauce
1- bunch of cilantro
1/2 cup vegan mayo
1/2 cup vegan sour cream
1/4 cup almond or coconut milk
2 garlic cloves
1-tsp garlic salt
1-tsp black pepper
Preheat oven to 375 degrees. Combine all dry ingredients, set aside. In a large bowl add the sweet potatoes and 2 Tbs Olive oil, toss to coat. Add dry ingredients mix well to coat.
Place potatoes into deep baking pan. Roast for 30-45 minutes, stirring halfway through cooking. When Potatoes are almost fork tender add the rinsed black beans and frozen corn. Make sure to stir everything together to get a nice coating of all the spices. Bake for an additional 15 minutes.
In blender combine all ingredients for your Cilantro cream sauce. Make sure cilantro has been thoroughly washed to remove sand. Cut tops off cilantro no stems added.
