Fab’s Sweet Potato Salad

3 sweet potatoes
1 red bell pepper
3 stalks of celery
1/4 cup of scallions
1/2 cup vegan mayonnaise
2 tbsp of mustard
1tsp of ground ginger
1tsp of cumin
1tsp garlic salt
1tsp of smoked paprika
1tsp of pepper
1/4 cup chopped cilantro

Peel and chop the potatoes into 1 inch pieces, set aside. Chop celery, red pepper, and scallions put in bowl and set aside. In shallow baking dish add potatoes, drizzle of olive oil and spices coating evenly and put in oven at 400 degrees for about 20 minutes until tender. Remember to not overcook, this is going to be a salad so you want them still firm. Once done put them in freezer to stop the cooking process for about 15 minutes. Once cooled toss everything together including the mayonnaise and mustard. Add the cilantro and mix well. Served chilled.
