Summer Watermelon Cucumber Salad


Summer is upon us and one of my favorite salads includes refreshing watermelon!

1/4 of whole watermelon sliced or diced
2 organic cucumbers peeled and sliced
2 Tbsp of chopped mint
2 Tbsp of fresh lime juice
Sprinkle of Pink Himalayan Sea salt

Mix all ingredients in a beautiful bowl and serve chilled. You could also add beautiful berries which enhance the flavor and nutrients.

Watermelon- Highest alkalizing fruit, reduced high blood pressure, boosts immune system, Strengthens bones, produces energy, cleans kidneys and fights cancer

Cucumbers- High in fiber, aids in digestion, reduces inflammation, fights cancer, revitalizes skin, high in antioxidants, and good for treating blood pressure issues.

Mint- Improves oral health, relieves symptoms of acne, helps prevent cancer, promotes digestion, inhibits the release of histamines that causes allergies and hay fever.

Pink Salt- Helps strengthen bones, improves circulation, relaxes body and mind, relieves muscle cramps, and promotes a healthy pH balance.
