Quinoa Mango Salad

This tasty salad is a wonderful side dish or a satisfying meal in itself.

  • 1 cup quinoa cooked
  • 1 mango cubed
  • 1 small can black beans drained
  • 2 tbs vegan mayonaise
  • 1 tbs lemon juice
  • 1 tbs coconut oil (liquid)
  • 1 tsp grated ginger
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp turmeric

Combine all ingredients in a large bowl and mix well.  Season with pink himalayan sea salt and pepper to taste.  Optional, add red pepper flakes to taste.
