Who doesn’t love a big ol’ bowl of spaghetti? It may taste delicious, but the carb overload and bloat that can accompany a nutrient depleted food like pasta is not my idea of a “good time”.
You have probably seen the oodles of “Zoodles” popping up on grocery store shelves. Veggie Noodles can be made from just about any vegetable, from the original Zoodle (made from zucchini), to carrots, cucumbers, beets, squash and more. Spiralized veggies are gluten and grain free, fiber rich and loaded with nutrients. Quickly submerge your spiralized veggies in boiling water for a minute or two to retain nutrients and keep them firm or eat them raw. Top with your favorite protein and sauce or dressing and you have a nutrient powerhouse meal.
Please note: no one is claiming that veggie noodles taste the same as pasta – that is not the goal here. Please be responsible and realize that swapping veggie noodles out for spaghetti on your kids and unwilling participants may result in tears. Instead, be open and honest with your menu and you may be surprised at how much everyone can enjoy this healthy alternative.
