Raw-kin Blueberry Pie

This all natural, no processed sugar added, RAW pie is sure to make you come back for seconds! You won’t believe how simple, yet delicious this pie is.  This time, it really is OK to have pie for breakfast!

Here is what you will need:


2 cups raw almonds

1/2 cup pitted dates

1 1/2 tsp cinnamon

1/2 tsp clove


5 cups organic blueberries (separate 1 cup and put to the side, reserve 3 large blueberries for garnish)

2 bananas

1 1/2 tbs raw honey or agave

3 tbs fresh lemon zest

1 tsp vanilla


1/3 cup raw almonds

1/4 cup gluten free old fashioned oats

2 tbs chia seeds

1/2 tsp cinnamon

1/4 tsp clove

5 pitted dates

1 tsp honey

1 tsp lemon juice

Soak the 1/2 cup of pitted dates in a small amount of water while you set up the food processor.  Finely grind 2 cups of raw almonds in the processor, be sure to break down any large pieces.  Remove the 1/2 cup dates from the water, set water aside and add the dates to the processor with the 1 1/2 tsp cinnamon and 1/2 tsp clove.  Blend until smooth and the mixture starts to fall away from the sides in clumps.  We added a 1/2 tsp of the date water into the mixture to help with this.  Press the mixture into the bottom of a 9 inch pie plate and set aside.

In a clean food processor combine 4 cups of rinsed blueberries, 2 bananas, 1 1/2 tbs honey, 3 tbs of lemon zest and 1 tsp of vanilla.  Blend until smooth, using a spatula to scrape the mixture from the sides and identify any clumps.  Be sure the mixture is completely smooth and free of any chunks of banana.  Pour into a bowl and stir in the 1 cup of whole blueberries previously set aside.  Pour the mixture evenly into the pie crust (you may end up with some left over filling – you can use it to make a parfait or smoothie bowl).  Place the pie in the refrigerator to start to set as you prepare the crumble.

In a clean food processor combine the remaining almonds, oats, chia seeds, cinnamon, clove, honey, lemon juice and 5 dates (soak these for a few minutes ahead of time as well).  Blend until well combined, but still chunky.  Remove the pie from the refrigerator and sprinkle the crumble evenly over the surface of the pie.  Place the 3 large blueberries into the center as a garnish.  Chill for 3 hours to set.  Allow to come up to room temperature before serving.
