Vegan, Gluten Free Brussels Sprouts with Cranberries

Vegan Gluten Free Brussels Sprouts

Check out this super simple, super nutritious and super delicious side dish fit for any occasion.  Brussels sprouts are a great source of vitamins C, K, B6 and B1 as well as folate, manganese, potassium, phosphorus and omega 3 fatty acids.

In a large baking dish combine 2.5 lbs of halved brussels sprouts, 1 vidalia onion sliced, 1.5 cups cranberries, 2 tbs avocado oil, 1/3 cup pure maple syrup, 3 cloves chopped garlic, and salt and pepper to taste.  Toss all of the ingredients to thoroughly combine and coat.  Bake at 350 for 45 mins to 1 hour.
