Raw Red Pepper and Chia Salad

This salad is great for hydration thanks to the cucumber and watermelon.  Chia seeds add a little protein and the red pepper and raspberries pack a huge antioxidant punch.

Ingredients

  • 1 Organic English Cucumber spiralized
  • 1/2 Organic red pepper thinly sliced
  • 1 cup Watermelon rind removed, thinly sliced
  • 1/2 cup Organic raspberries
  • 1 tbsp Chia Seeds
  • 1 tbsp Avocado Pesto

Instructions

  1. Combine the cucumber, red pepper, watermelon and raspberries in a bowl

  2. Top with the chia seeds and dressing

Avocado Pesto

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 2

Ingredients

  • 2 large Avocados
  • 3 cups fresh basil
  • 1/3 cup nuts of your choice (walnuts, pine nuts or pistachios)
  • 3 cloves garlic
  • 1/2 cup avocado oil
  • 1 tsp pink Himalayan sea salt

Instructions

  1. Combine all ingredients in a food processor and blend until smooth.  Serve over spiralized veggie noodles or the pasta of your choice (this would be the only cook time).
