Vegan Raw Marinated Mushrooms

These baby bellas pack a flavorful punch and are great to top salads, on their own or with your favorite whole grain cracker.

  • 1 cup Avocado Oil
  • 1/3 cup Red Wine Vinegar
  • 1/3 cup White Wine Vinegar
  • 1 tsp Raw Agave
  • 1 tsp Black pepper ground
  • 2 tsp Pink Himalayan Sea Salt
  • 1 tsp Basil fresh or dried
  • 1 tsp Garlic powder
  • 2 tsp Oregano fresh or dried
  • 2 tsp Parsley fresh or dried
  • 1/2 tsp Thyme fresh or dried
  • 12 ounces Baby Portobello Mushrooms


  1. Rinse, clean and slice the mushrooms

  2. Combine all ingredients into a large bowl and stir to coat thoroughly

  3. Place the mushroom mixture into a glass mason jar and refrigerate at least overnight

  4. To increase flavor, allow the mushrooms to marinate longer than overnight
