Thai Style Rice Noodle Soup (Vegan, Gluten Free)


Vegan, Gluten Free Thai Style Rice Noodle Soup

Quick, simple and so comforting.

  • 1 14 oz Thai Kitchen thin rice noodles
  • 4 tbs No Chicken Chicken Boullion
  • 8 cups Water
  • 2 cups Coconut Milk Beverage unsweetened
  • 1 tbs Red Curry Paste
  • 2 tsp Turmeric Powder
  • 2 tsp Powdered Ginger or 1 tsp fresh grated
  • 1 tsp Garlic salt
  • 1/2 cup Chopped scallion greens


  1. Combine water, bouillon, scallions and seasonings in a large pot.

  2. Bring to a boil and then simmer for 15 mins

  3. Add the dried rice noodles and cook until soft (approximately 10 mins)

  4. Serve immediately
