Vegan, Gluten Free Thai Style Rice Noodle Soup
Quick, simple and so comforting.
- 1 14 oz Thai Kitchen thin rice noodles
- 4 tbs No Chicken Chicken Boullion
- 8 cups Water
- 2 cups Coconut Milk Beverage unsweetened
- 1 tbs Red Curry Paste
- 2 tsp Turmeric Powder
- 2 tsp Powdered Ginger or 1 tsp fresh grated
- 1 tsp Garlic salt
- 1/2 cup Chopped scallion greens
Combine water, bouillon, scallions and seasonings in a large pot.
Bring to a boil and then simmer for 15 mins
Add the dried rice noodles and cook until soft (approximately 10 mins)
