Blueberry Protein Bites

Sweet, fruity, nutty all in one delicious, protein and healthy fat packed bite.


  • 2 cups Raw cashews
  • 1 cup Medjool Dates
  • 1 cup Dried, organic blueberries
  • 1 1/2 tsp Pure vanilla extract
  • 1/4 tsp Pink Himalayan sea salt
  • Zest of 1 lemon
  • Juice of 1/2 a lemon


  1. Grind the cashews in the food processor until they are ground into small pieces.

  2. Add the dates and dried blueberries and process until combined and sticky.

  3. Add the lemon zest, lemon juice, vanilla and salt and process until well combined.

  4. Remove the dough from the processor and place on a sheet of wax paper.

  5. Form small, bite sized balls and store in the fridge or the freezer.  Use wax paper to separate the layers of bites and minimize sticking.
