Garlic Mushroom Quinoa

An easy, protein packed main dish or side dish

Servings 4


  • 3 ea Scallions, chopped separate white and greens
  • 1 lb Baby bella mushrooms washed and chopped
  • 5 clove Garlic chopped
  • 1 tsp Thyme
  • 1 tsp Black pepper
  • 1 tsp Avocado oil
  • 1 cup Quinoa (dry)


  1. Prepare your quinoa per the package instructions.

  2. In a separate pan, saute the mushrooms in the avocado oil with the scallion whites and seasonings.

  3. Put the prepared quinoa into a serving dish and combine with the sauteed mushrooms, stir to combine thoroughly.

  4. Sprinkle with the scallion greens for garnish.
