Garlic Mushroom Quinoa
An easy, protein packed main dish or side dish
- 3 ea Scallions, chopped separate white and greens
- 1 lb Baby bella mushrooms washed and chopped
- 5 clove Garlic chopped
- 1 tsp Thyme
- 1 tsp Black pepper
- 1 tsp Avocado oil
- 1 cup Quinoa (dry)
Prepare your quinoa per the package instructions.
In a separate pan, saute the mushrooms in the avocado oil with the scallion whites and seasonings.
Put the prepared quinoa into a serving dish and combine with the sauteed mushrooms, stir to combine thoroughly.
Sprinkle with the scallion greens for garnish.
