Athenian Zoodles (vegan, gluten free)

These greek style vegetable noodles are delicious, quick and easy

  • 2 medium Zucchini squash organic spiralized
  • 2 medium Yellow squash organic, spiralized
  • 1 quart Cherry tomatoes organic, halved
  • 1 cup Artichoke hearts
  • 1 cup Kalamata or Black olives drained, pitted and sliced


  • 2 tbs Tahini
  • 2 tbs Lemon juice fresh squeezed
  • 1 cup Non dairy yogurt
  • 1 tsp Dill fresh or dried
  • 1 tbs Parsley fresh
  • 2 cloves Garlic fresh, minced
  • 1 tsp Paprika
  • Fresh Black Pepper to taste


  1. Combine the spiralized squashes with the tomatoes, artichoke hearts and olives in a bowl and toss to combine.  Portion out into dishes

  2. Combine tahini, yogurt, lemon juice and spices in a bowl and stir to combine thoroughly.

  3. Top each portion of veggie noodles with the tahini yogurt dressing.
