Cucumber Pineapple Salad (vegan, gluten free)
High in anti-oxidants, reduces inflammation, boosts immunity, a natural detoxifer and tastes light and refreshing.
- 2 ea Organic English Cumbers spiralized
- 1/4 ea Pineapple thinly sliced
- 1/3 cup Sesame seeds
- 1/4 cup Cilantro washed and diced
- 4 tbs Sesame oil
- 4 tbs Rice Wine Vinegar
- 4 tbs Lime juice fresh
- 1 tbs Agave
- 1 tsp Garlic powder
- 2 tsp Powdered Ginger
- 2 tsp Cumin
- 1 dash Red pepper flakes to taste
Combine spiralized cucumber and sliced pineapple into a large bowl and set aside.
Using a food processor or blender combine all ingredients for the dressing except the sesame seeds and pulse until combined well.
Pour the dressing mixture over the cucumber and pineapple and toss well to coat.
Plate individual portions and sprinkle with sesame seeds for garnish.
