Fab's Beet the Heat Salad (raw, vegan, gluten free)

This sensational salad is loaded with antioxidants, reduces inflammation and helps to increase oxygen in the blood.

Ingredients

  • 1 bulb Fennel shaved
  • 2 ea Beets shaved
  • 7 ea Radishes shaved
  • 2 ea Zucchini shaved
  • Mandarin orange slices optional as garnish

Dressing

  • 2 tbs Avocado oil
  • 2 tbs Lemon juice fresh squeezed
  • 2 tbs Lime juice fresh squeezed
  • 1/4 cup Balsamic vinegar
  • 2 tbs Coarse ground mustard
  • 1/2 inch Ginger fresh, grated
  • 1 tsp Garlic salt
  • 1 handful Cilantro chopped

Instructions

  1. Use a mandolin to shave all of the veggies and combine in a bowl and set aside.  

  2. Combine the dressing ingredients in a blender or food processor and blend until smooth. 
  3. Toss the shaved veggies in the dressing to coat and serve with mandarin orange slices (optional).
