Baked Beans (gluten free, vegan)
A vegan twist on this delicious comfort food.
- 2 bags Navy beans dry
- 2 large Onions sliced
- 1/2 cup Brown sugar
- 1 cup Molasses
- 2 tbs Dried mustard
- 6 cups Water
In a sauce pan on the stove combine the navy beans and the 6 cups of water. Bring to a boil and then let simmer 45 mins to 1 hour or until the beans are tender and starting to split.
Drain the beans, but reserve the water.
Add the beans and sliced onions to the crock pot and set aside.
Return the hot water back to the sauce pan and add the molasses and spices and mix to combine/dissolve.
Pour the water and spice mixture over the beans in the crockpot and stir well to combine. *Make sure the water covers the beans, and if it doesn't top off with more water until it does.
Cook on low for 4 hours in the crockpot.
