Energy bites (raw, vegan, gluten free)

These little bites are perfect for a boost of natural energy.  They are perfect for grab and go and for packing in school lunches.

Ingredients

  • 1 cup Organic rolled oats gluten free
  • 2 cups Pitted dates tightly packed
  • 3/4 cup Finely grated carrot lightly packed
  • 1 tsp Cinnamon
  • 1/4 tsp Pink Himalayan Sea Salt
  • 1 cup Shredded coconut unsweetened

Instructions

  1. Place the oats into a food processor and pulse until fine.

  2. Add the remaining ingredients except for the coconut and mix until a thick dough is formed.

  3. Form into small bites or balls and roll in the shredded coconut.

  4. Makes approximately 20 balls
