Energy bites (raw, vegan, gluten free)
These little bites are perfect for a boost of natural energy. They are perfect for grab and go and for packing in school lunches.
- 1 cup Organic rolled oats gluten free
- 2 cups Pitted dates tightly packed
- 3/4 cup Finely grated carrot lightly packed
- 1 tsp Cinnamon
- 1/4 tsp Pink Himalayan Sea Salt
- 1 cup Shredded coconut unsweetened
Place the oats into a food processor and pulse until fine.
Add the remaining ingredients except for the coconut and mix until a thick dough is formed.
Form into small bites or balls and roll in the shredded coconut.
Makes approximately 20 balls
