Raw-kin Blueberry Pie (raw, vegan, gluten free)
This all natural, no processed sugar added, no bake pie is sure to make you come back for seconds! You won't believe how simple, yet delicious this pie is. This time, it really is OK to have pie for breakfast!
- 2 cups Almonds raw
- 1/2 cup Pitted dates
- 1 1/2 tsp Cinnamon
- 1/4 tsp Clove
- 5 cups Blueberries organic
- 2 medium Bananas
- 1 1/2 tbs Raw honey or agave
- 3 tbs Lemon zest fresh
- 1 tsp Natural Vanilla extract
- 1/3 cup Almonds raw
- 1/4 cup Old fashioned oats gluten free
- 2 tbs Chia seeds
- 1/2 tsp Cinnamon
- 1/8 tsp Clove
- 5 Dates pitted
- 1 tsp Raw honey or agave
- 1 tsp Lemon juice fresh
Soak the 1/2 cup of pitted dates in some water while you gather the rest of the ingredients and set up the food processor.
Finely grind 2 cups of almonds and be sure to break down any large pieces.
Remove the dates from the water and add them to the ground almonds with the cinnamon and clove. Blend until smooth and the mixture starts to pull away from the sides of the processor. You may need to add a 1/2 teaspoon of the date water into the mixture to get the right consistency.
Press the mixture evenly into the bottom of a 9 inch pie plate and set aside.
In a clean and dry food processor combine 4 cups of rinsed and dried blueberries (set the remaining cup aside), the 2 peeled bananas, 1 1/2 tbs of honey, 3 tbs of lemon zest and 1 tsp of vanilla. Blend until completely smooth and free of any chunks of banana.
Pour into a bowl and stir in the 1 cup of whole blueberries previously set aside. Pour the mixture evenly into the pie crust.
*You may have extra filling that can be refrigerated and used for a parfait or smoothie bowl
Place the pie into the refrigerator to start to set while you prepare the crumble.
In a clean and dry food processor combine the remaining almonds, oats, chia seeds, cinnamon, clove, honey, lemon juice and dates (soak these in water for a few minutes before processing). Blend until well combined, but still chunky.
Remove the pie from the refrigerator and sprinkle the crumble evenly over the surface of the pie.
Chill for at least 3 hours to set. Allow to come up to room temperature before serving.
