Voortman PB and Nanner Balls (vegan)

I am always on the lookout for easy, plant based protein snacks for my active, tutu wearing teenager Mackenzie.  Being a full time dancer, Kenz needs nutrient dense snacks that she can easily take with her and have between classes.  While they are not gluten free, the Voortman Banana Wafers are free from artificial colors and flavors and do not contain high-fructose corn syrup.  Check out the fun recipe below:

Voortman PB and Nanner Balls (vegan)

A high protein snack for kids ages 1 to 100

Prep Time 20 minutes
Servings 8

Ingredients

  • 1 pack Voortman Banana Wafers reserve 1 row
  • 1/2 cup All natural creamy peanut butter or substitute your favorite nut butter
  • 2 tbsp Chia Seeds
  • 1 tsp Agave
  • 1 tbsp Cocoa powder raw, unsweetened

Instructions

  1. In a large bowl use your hands to crush the Voortman Banana Wafers until they are crushed.  Be sure to set aside one row of wafers for use later.

  2. Add the peanut butter, chia seeds and honey to the crushed wafers and stir until well combined.  Cover with wax paper or plastic wrap and freeze for 10 minutes.

  3. While the dough is chilling place the remaining row of wafers onto a plate and crush them with your hands.  Add the cocoa powder and stir well to combine.

  4. Once the dough is done chilling, roll into small balls and roll in the wafer and cocoa mixture.


  5. Store in an airtight container for up to 5 days.

  6. Makes approximately 24 balls
