Chickpea Salad Sandwich (vegan, gluten free)

Ingredients

  • 2 Carrots organic, peeled and diced
  • 2 Celery stalks organic, diced
  • 1 can Chickpeas (Garbanzo beans) organic, drained and washed
  • 1/2 cup Vegan mayonnaise
  • 2 tsp Pink Himalayan Salt
  • 1 tsp Ground Black Pepper
  • 1 tsp Cumin
  • 1 tsp Ground Ginger
  • 1/2 tsp Celery seed
  • 1 Red onion, small peeled, largely diced

Instructions

  1. Place all ingredients into the food processor and pulse until chunky but well blended.

  2. Serve on your favorite gluten free bread and top with lettuce, tomato and sprouts
