American Chop Suey (vegan, gluten free)
As a New Englander and part Italian, I grew up on American Chop Suey. It is pure comfort food! I am always trying to come up with new recipes using gluten free and vegan ingredients. It has taken me a while to find the perfect blend of ingredients to get the same comfort and soul of this New England favorite, but I think I have found it!

- 16 oz Gluten free elbow macaroni
- 1 jar Barilla roasted garlic tomato sauce
- 1 large Onion white
- 1 pack Beyond Meat burgers 2 patties per pack
- 2 tsp Avocado oil separated
- 1 tbsp garlic salt
- 2 clove Garlic minced
- 1 tbsp Italian spice blend crushed
- 1 handful Basil fresh, finely chopped
- Can substitute 1 tbsp Pesto for basil
Fill a large pot with water, season with salt, and bring to a boil. Cook pasta according to directions. Drain and set aside.
In a separate pot add 1 tsp avocado oil and diced onion to saute, stirring quickly until onions are translucent (about 4 minutes) then set those aside.
In the same pot add 1 tsp of avocado oil and the two burger patties. Use a spatula to mince up into bite size pieces as it cooks (until brown, about 5 minutes).
Add the onions, pasta sauce, diced garlic, pesto or fresh basil, and all the spices into the burger mix and let simmer for about 20 minutes to meld the flavors together.
Combine the cooked pasta and mix together and enjoy!
