Eggnog (vegan, gluten free)
All the flavors of the original without the eggs or cows milk. Hot or cold this classic with a twist is sure to please.
- 1 cup Cashews
- 4 cups Non dairy milk (almond, cashew or coconut)
- 2 tbsp Coconut sugar
- 3 tbsp Water
- 2 tsp Cinnamon
- 1 tsp Nutmeg
- 1/2 tsp Cloves
- 1/2 tsp Cardamom
- 8 ea Dates
- 6 tbsp Gluten Free Bourbon (Makers Mark) or Rum Optional
- Freshly grated nutmeg for garnish
In a medium bowl combine the cashews and the non dairy milk and allow to soak for one hour.
In a small saucepan combine the coconut sugar, water, cinnamon, nutmeg, clove and cardamom and bring to a boil. Stir until the sugar dissolves and remove from the heat and set aside.
In a blender combine the spiced simple syrup, dates, cashews, almond milk and bourbon/rum (optional). Blend until smooth.
Portion into individual glasses and top with freshly grated nutmeg. Can be served hot or cold.
