Vegan Chocolate Covered Strawberries
- 2 bags Enjoy Life Vegan Chocolate Chips
- 1 tsp coconut oil
- 1/2 tsp pure vanilla extract
- 4 cups organic fresh strawberries
Bring 3 cups of water to a boil in a medium sauce pan and cover with a stainless steel bowl (or use a double boiler). Combine the chocolate, coconut oil and vanilla in the bowl and stir frequently until melted and combined. Remove the bowl from the heat source.
Dip the strawberries into the melted chocolate and arrange in a single layer on a sheet pan lined with wax paper. Refrigerate for 1 hour to allow the chocolate to set.
