Lemon Basil Asparagus Salad

This fresh twist on a summer salad will have you wanting more

Lemon Basil Vinaigrette

  • 1/2 cup fresh lemon juice, squeezed
  • 1 tbsp Dijon Mustard
  • 1 small bunch fresh basil, stemmed
  • 1 clove garlic
  • 1/2 cup olive oil
  • 1 tsp fresh ground pepper
  • 1 tsp pink salt

Asparagus Salad

  • 1 bunch organic asparagus
  • 1 cup halved strawberries
  • 1/2 cup slivered almonds toasted
  • 1 cup fresh organic spinach


  1. Dressing: Add all ingredients into a blender and blend until smooth. Set aside

    Salad: Blanch asparagus until tender, soak in ice bath to stop the cooking process. Slice the strawberries, and toast the almonds.

    Place all ingredients on plate and drizzle with dressing and serve.
