Fresh Lime and Berry Quinoa Salad

Ingredients

Lime-Agave Dressing

  • 1/2 cup fresh lime, juiced
  • 1 tbsp agave or maple syrup
  • 1 tbsp lemon, juiced
  • 1 tbsp finely chopped mint
  • 1 tbsp finely chopped basil

Quinoa Salad

  • 2 cups cooked red quinoa
  • 1 cup halved organic raspberries
  • 1 cup organic blueberries
  • 1/2 cup walnuts

Instructions

  1. Dressing: Add all ingredients to a high speed blender and blend on low for a minute- Set aside

    Salad: Combine all ingredients in a bowl and drizzle with the lime-agave dressing
