Festive Fall Roasted Sweet Potatoes and Apples
This is a healthy, easy and delicious side dish, breakfast meal, or a Thanksgiving hit!
- 2 medium sweet potatoes, cut into 1" cubes
- 2 medium organic (fuji, gala, or granny smith) apples, cut into 1" cubes
- 4 tbsp avocado oil
- 1 tsp pink salt
- 2 tbsp pure Maple Syrup
- 2 tsp Cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground clove
Pre heat oven to 425 degrees
Grease a large baking pan, set aside
In a large bowl, toss cubed sweet potatoes with 2 tbsp avocado oil, add salt, 1tsp of cinnamon, and stir until evenly distributed
Bake in the preheated oven for 20 minutes stiring halfway through, until sweet potatoes are just barley brown
While sweet poatoes are baking stir the remaining oil into apples. Add the rest of the dry ingredients, and maple syrup and stir to combine.
When the sweet potatoes are halfway brown, remove from oven, add the apple mixture, stir and combine. Make sure your pan is big enough for only 1 layer of apples and potatoes.
Return to the oven and bake for 20 more minutes.
Once the sweet potatoes and apples are browned remove and serve immediately!
