Zoodles with Avocado Cream Sauce

  • 1 medium Zucchini Peeled and Spiralized
  • 1 medium Cucumber Peeled and Spriralized
  • 1/2 Avocado
  • 2 tbsp Lime juice
  • 1/2 cup Marinated Artichokes
  • 1 tsp paprika
  • 1 tsp Pink himalayan Salt
  • 1 tbsp vegan mayonaise
  1. Peel and Spiralize the cucumber and zucchini. Lay on paper towels and squeeze water out. Set aside in a bowl. In the vitamin or blender add the avocado, mayonnaise, lime juice, 1/2 tsp of the pink salt and blend. Pour over the zoodles Sprinkle the rest of the salt and add the marinated artichokes to the top. Sprinkle with paprika and enjoy!!
